Since Apple didn't sponsor the video it should have been mentioned that Samsungs Galaxy watches also have this function. Shame you didn't have one of those handy as it might have been interesting to compare the difference.
So I'm guessing the watch still worked after he disengaged the water lock under water, otherwise he probably would have mentioned that it was a silly idea and his phone was buggered.
